Paneer tikka recipe ingredients:-
Paneer - 1/2 kg (cut in cubes)
Yoghurt - 1/2 cup (tied in cloth for 2 hours)
Capsicum (chopped) - 1
Onion (chopped) - 2
Tomato (chopped) - 1
Ginger-garlic paste - 2 tsp
Red Chilli powder - 1 tsp
Chaat masala - 1/2 tsp
Coriander leaves - 1/2 tbsp (finely chopped)
Butter - 1 tbsp
Salt to taste

Paneer tikka recipe preparation method:-
Mix the yoghurt, red chilli powder, ginger-garlic paste,  salt and coriander leaves together to make a paste. Dip the paneer in the paste and keep the dipped paneer aside for about 30 minutes. Heat a butter in a pan and fry the paneer slices till paneer gets brown from all sides and keep the paneer aside. Put the remaining butter in the pan and add onion, tomatoes, chaat masala and salt to taste. Pour over the paneer tikka. Garnish paneer tikka with onion rings, coriander leaves and serve paneer tikka hot with indian recipe of tomato chutney.

Matar paneer recipe ingredients:-
Green Peas (boiled) - 150 gms
Paneer - 100 gms
Onion (chopped) - 1
Tomato (chopped) -1
Ginger-garlic paste - 1 tsp
Asafoetida - a pinch
Red chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1 tsp
Oil for deep frying
Chopped coriander leaves - 1 tsp
Salt to taste

Matar paneer recipe preparation Method:-
Cut paneer square pieces and fry paneer in oil. Keep the paneer aside. Heat 1 tbsp of oil, add asafoetida and then add onion and fry till golden brown. Add ginger-garlic paste in it, cook for few minutes. Put red chilli powder, tumeric powder and salt to it. Then add tomatoes in it, fry for few minutes. After that add garam masala powder and boiled peas and cook for another few minutes. Add little water to make thick gravy, let it boil, at last add the fried paneer in it. Garnish matar paneer with coriander leaves and serve matar paneer hot with indian recipe of naan and rice or vegatable pulao.

Masala dosa recipe ingredients:-
Rice grain - 1 cup
Parboiled rice - 1 cup
White urad dal (black gram without cover) - 1/4 cup
Salt to taste
Filling for masala dosa:-
Boiled potatoes - 3
Onions (chopped) - 1
Green chilies (chopped) - 3
Fenugreek seeds - 1 tsp
Chopped coriander leaves - 1 tbsp
Oil - 1 tbsp
Salt to taste

Masala dosa recipe preparation method:-
Soak rice and urad dal in water for few hours. Grind the soaked rice & gram to a fine paste. Add salt in it and keep the batter aside for few hours (5-6). Heat oil in a pan, add fenugreek seeds. Add onion and green chilli and fry till brown. Add boiled potatoes and salt to it. Cook for 2 minutes and garnish with coriander leaves. Heat a greased dosa pan, keep little batter on the pan, spread it and sprinkle some oil on the dosa. Put one spoon of filling, fill in the center & roll the dosa. Serve hot masala dosa with indian recipe of sambhar and coconut chutney.

Dhokla, light and fluffy steamed cubes of gram flour mixture. This is a famous indian recipe also called as Khaman. Dhokla is eaten mostly in west india, specially in Gujarat. Thus, it could be categorized as a gujarati dish. Dhokla recipe could be called as gujarati recipe. Dhokla is also very famous dish for Holi festival. Dhokla recipe ingredients:-
Gram flour (besan) - 1 1/2 cup
Green Chilli - 2
Asafeotida - a pinch

Baking Soda - 3/4 tsp
Curd - 2 tbsp
Lime juice - 1 tbsp
Oil - 1 tbsp
Sugar as per taste

Corainder leaves - 1tbsp
Grated coconut - 1 tbsp

Dhokla recipe preparation method:-
Mix the gram flour, curd and tumeric powder with warm water to make a thick batter. Add chillies, ginger, salt, soda and lime juice, and blend until mixed thoroughly. Add the paste to gram flour mixture and mix it. Pour the mixture into a greased plate or shallow cake pan and place it in a steamer. Cover and steam for 15 minutes. When cool, cut the dhokla into pieces. Heat oil in a pan and add mustard seeds. When seeds start to splutter, add the asafetida and pour over the cut dhoklas. Garnish this indian recipe dhokla with grated coconut and coriander leaves and serve with chuteny.

The wider the variety of the food you eat, the better chance you have to get all the nutrients for good health. There are some food with such a strong link to disease prevention and a wealth of nutrients that it makes sense to eat them every day.

One of them is dark green leafs vegetables. They are know to have full of anti-cancer compounds, vitamins and minerals. They contain folic acid to help prevent neural-tube birth defects, antioxidants betacarotene and vitamin C, fibre, and anti-cancer compunds and beta-carotene and lutein.

All-purpose flour (maida) - 500 gms
Yogurt - 1 cup

Sieve the all-purpose flour (maida), add oil, yogurt, baking powder and knead to a smooth dough with the help of luke warm water. Cover with a muslin cloth and keep aside for few hours. I love to cook this indian recipe of Dahi vada once in a while. I am basically from north india. In Holi, I ensure that I cook Dahi vada for to be enjoyed by entire family and guests visiting us.

Balls or vada:-
Black gram - 1 cup
Green chilli - 2

Yogurt - 3 cups
Roasted cumin powder - 1 tsp
Pepper powder - 1/2 tsp
Salt to taste

Dahi Vada recipe preparation method:-
Wash and soak urad dal overnight. Drain excess water. Add green chili, asafoetida and grind to paste. Heat oil in pan, fry small flat ball on medium brown until golden brown. Drain off excess oil by putting it in a salt water for 2 minutes. Remove and squeeze water from balls (vada). Add salt, pepper, and roasted cumin powder in yogurt and mix well. Add yogurt mixture over the vada 1 hour before serving. Sprinkle roasted cumin powder, black salt and chopped coriander leaves. Serve this indian recipe of dahi vada with tamarind chutney or tomato sauce.

Soak the cashew nuts (kaju) in milk for few hours. Blend the kaju to a fine paste adding milk if required. Take a pan and add the blended paste and sugar. Keep on stirring continuously for few minutes. Add the ghee slowly into the pan and keep stirring till the mixture leaves the sides of the pan and forms a lump. Add cardamon powder and mix well. Remove from heat. Spread evenly on a greased plate. Decorate with the silver sheets. Cook the rice so that each grain is separate. Let it cool. Heat the ghee or butter in a pan, add the curry leaves. When it splutter add the chopped onions and the green chillies until the onions turn translucent. Add the tomatoes and sauté till soft. Add the spices and keep frying for a minute. Add salt and cooked rice and mix well taking care not to break the rice grains. Garnish with coriander leaves. Serve hot tomato rice with curry and pappads.

Indian recipe and use of yoghurt (dahi)

I live in south India and found one of the very cool practise here. People definitely make it a point to use yoghurt at the end of the meal, be it lunch or dinner, be it whatever kind of indian recipe. This practise is not prevalant so much in north india. I was not sure of the reason.
People in south india do eat spicy meals, both in lunch or dinner. You go to Andhra pradesh, Karnataka, Tamil nadu, Kerela etc. Lunch/dinner comprises of rice, sambhar, rasam, potato curry and outher varieties of curry. But, of course, yoghurt in the end.
Why so? After asking so many of them and confirming for myself, I came to the conclusion that they eat yoghurt because it helps in smooth digestion. People also told that it cools stomach because we eat spicy food.

But, one thing is for certain. Yoghurt smoothes the process of digestion. So, it could be said as good practise to add yoghurt at the end of the meals. Indian recipe could be really enjoyed well with yoghurt.

Gulab Jamun, one of the favorite Indian recipe. They are cake like golden brown balls in scented sugar syrup. This recipe can be served warm or cold.

Gulab jamun recipe ingredients:-
Gulab jamun balls:
Dry milk (khoya) - 150 gms
Indian cottage cheese (paneer) - 30 gms
All purpose Flour (maida) - 1 tbsp
Baking Soda - 1 tsp
Oil to deep fry
Gulab jamun syrup:
Sugar - 2
Water - 2
Cardamom powder - 2 tsp
Rose Water - few drops

Gulab jamun recipe preparation method:-
First make the syrup by dissolving sugar in water. Add cardamom powder and rose water in it. Keep it aside. Mix dry milk, cottage cheese, soda, all propose flour and a little milk (if needed) to make it into a soft dough and make into small balls. Heat the oil until hot and fry the balls to a golden brown or until they are darkbrown. Soak in sugar syrup for a few hours. Garnish gulab jamun with coconut powder and serve hot or cold.

Chicken karahi recipe ingredients:-
Boneless chicken - 1 kg
Onion (chopped) - 2
Tomato (chopped) - 2
Green chilli (chopped) - 3
Ginger-garlic paste - 3 tbsp
Pepper powder - 1/2 tsp
Red chilli powder - 1 tsp
Coriander leaves (chopped) - 2 tbsp
Oil for cooking
Salt to taste

Chicken karahi recipe preparation method:-
Cut the chicken in small pieces. Heat oil in a karahi (pan) and add onion and fry unitil brown. Add  ginger-garlic paste and stir fry for few second then put in the chicken in karahi and fry for few minutes. Add tomatoes, chilli powder, pepper powder and salt and cook for few minutes or until tender. Then put green chillies and coriander leaves in chicken karahi and cook for 2 minutes. Garnish with coriander leaves and limes. Serve hot chicken karahi with indian recipe of naan or rice.

Beingan ka bharta recipe preparation method:-
Roast the eggplant/beingan in hot oven til the skin gets slightly burnt and shriveled. Remove the skin of beingan. In a pot add all the ingredients to the eggplant pulp and cook on high flame till the water has dried up stirring constsntly otherwise it will burn.  Beingan ka bharta can be eaten with rice or chapati.

Kofta recipe ingredients:-
For the koftas
Onion (grated) - 2
Green chill (chopped) - 2
Cheakpeas flour - 4 tbsp
Baking soda - A pinch
Oil - For deep frying
salt to taste
For the gravy
Tomato (pureed) - 1
Onion (chopped) - 1
Ginger (grated) - 1 tsp
Chilli powder - 1 tsp
Corriander powder - 1 tsp
Garam masala - 1 tsp
Turmeric powder - 1 tsp
Milk - 4-5 tsp

Kofta recipe preparation method:- 
For the kofta:- Take the grated onion, add the cheakpeas flour, baking soda, green chilli and salt. Mix it well till soft and make a balls (egg-shaped) from it. Use oil or flour if the balls sticks to your hand. Fry the the mixture on a non-stick pan, till all sides are golden brown. Drain the kofta and keep aside.
For the Gravy:- Heat the oil in a pan and saute the onion till translucent. Add the tomato puree, ginger, turmeric powder, coriander powder and chilli powder and cook till the oil separates. Add the garam masala and salt. Then add milk and water in it. Add the kofta in the gravy 5 minutes before serving because koftas are very soft.

Washed and soaked the dals for 30 minutes. Add tamarind, tomato, carrot & onion to the dal. Pressure cook till dal is done very soft. Heat oil, add seeds, curry leaves and allow to splutter. Add remaning onion, tomato and stir fry for 2 minutes. Add all the above spices and salt, and cook for further 2 minutes. Add dal and bring to a boil. Add enough water to get sambhar consistency. Garnish sambhar with coriander and adjust the salt. Serve hot with indian recipe of Idli or Masala dosa.

Heat oil in a pan and add the above paste, kashmiri chilli powder, dry ginger powder and salt and fry for a minute and then immediately add yoghurt,so that the dry spice does not get burnt, stirring constantly.
Add water and let it come to boil. Add the potatoes (dum) along with garam masala. Cook over medium heat for few minutes or until the curry thickens. Serve kashmiri dum aloo hot with indian recipe of jeera rice or naan.

Indian recipe uses cooking oils in general to make it taste good. Variety of indian recipes could be found making the use of cooking oil. The question is, which kind of oil is good for health? Are we aware of the cooking oils and its impact on our health?

Even I dont see what cooking oil I am using. But, I believe its worth knowing a little bit of detail about the cooking oil we use. I was pretty much informed after knowing the impacts of cooking oil on our health in general.

The question is, which oil is less fattening, good for heart, and tastes good.


When it comes to fats some people go by grandma’s word and believe that `desi ghee or ghar ka ghee is the best for health. Others find vegetable oils good. But when it comes to fat there’s a lot more to it than just its purity. Fats are divided into three broad classes namely saturated fatty acids (SFA), polyunsaturated fatty acids (PUFA) and the monounsaturated fatty acids (MUFA).
When it was known that SFA coming from foods like Butter, Ghee, Cream, Egg yolk, bacon, beef, pork, organ meats elevate bad cholesterol (LDL) that causes heart trouble, these foods almost got banished from the diet, especially use of ghee in cooking. People also went overboard with use of PUFA- 6 fat coming from vegetable oils like sunflower, safflower, soyabean, cotton seed and corn oil as these were seen to lower the LDL levels. However recent research shows that although PUFA-6 lowers LDL it also lowers the good cholesterol (HDL) that prevents the LDL build up and keep the heart healthy. High levels of pufa 6 also alter the lipid ratio in the body and is suspected to cause diabetes and arthritis. MUFA found in groundnut oil lowers the LDL cholesterol but doesn’t affect the HDL. However further research findings reveal that another type of PUFA i.e. PUFA- 3 fatty acid found in fish and its oils, fenugreek seeds and leaves, linseed oil, walnuts, green leafy vegetables, rajma, udad dal and green moong not only lowers the LDL but also elevates the HDL thus protecting damage to the heart. Moreover it has a preventive role to play in diabetes, arthritis and certain cancers. So the safest bet is to either use PUFA-3 as a cooking medium or alternatively use ghee and oil in combination ( 1/3 of PUFA, MUFA and SFA) with large servings of PUFA 3 rich foods in the daily diet.
The bottom line is to cut total fat content to not more than 30 gms/day since fat gain still remains main cause of heart trouble, orthopedic disorders and diabetes.

Green pistachios (crushed) - 2 tbsp

Rasmalai recipe preparation method:-
Mix the cheese with sugar and little cardamom powder and spread out on a baking tray or make a oval shape and put in baking tray. Bake at 350 degrees for 35 minutes or until it sets. It should not get brown. Remove from oven, cool at room temperature and cut into 2" squares. Place them in a dessert bowl. Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares. Garnish rasmalai with pistachios. Put the rasmalai into refrigertor for 3 hours and then serve. (You can use sugar as per your taste and can add cashewnuts, raisins to add the taste of rasmalai)

Cook the chapati one by one. Keep aside. Beat eggs and add salt and red chilli powder and beat again. Heat oil in a pan. Add green chilli and onions, fry till golden brown in color. Add this to the beaten eggs. Heat 1 tbsp. oil in a pan. Slowly pour the beaten egg. Spread evenly and let it set. Sprinkle cumin powder, garam masala and then place chapati over it. Roll the chapati along with the egg and turn upside down. Cook it for about 2 minutes.
Similarly make all the four egg rolls. Place all the four egg rolls in a serving dish. Garnish with sliced cabbage, tomatoes and green coriander leaves. Serve hot egg rolls with chilli sauce or tomato sauce. You can add boneless mutton in egg roll.

Indian recipe having ginger in decent amount are very helpful in curing cold. I always knew that ginger helps in curing cold. However, never tried having ginger. Last night, I was having crazy cold infection. I wanted to have drug like actifed or cetrizine. But thought of expreimenting with matural remedies. Thus, I had ginger and goodh. Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze. Place slice strawberries and sugar powder to taste just before serving the ice cream cake.

Potatoes - 1 lb
Onion (diced) - 1/2 cup
Garlic (minced) - 2
Cumin powder - 2 tsp
Turmeric powder - 1/2 tsp
Yogurt (low fat) - 1 1/2 cup
Oil - 2 tbsp
Salt to taste

Potato salad recipe preparation method:-
Beat the yogurt and keep aside. In a small saucepan cook potato, covered, in boiling water for 20 to 25 minutes or until tender. Drain well, cool slightly. Peel and cube potato. Heat the oil in a pan. Add the onions and saute for 3 minutes. Add the garlic and saute for 2 more minutes. Add the cumin, turmeric and salt to taste and stir well. Add the cooked potatoes and cook for 2 minutes. Combine the potato mixture with the yogurt. Toss gently. Bhelpuri recipe preparation method:-

For cover:
Plain flour (maida) - 1 cup
Oil - 2 tbsp
Water
For filling:
Potatoes - 2

Green chilli (chopped) - 4
Corainder leaves (chopped) - 2 tsp
Oil to fry
Salt to taste
Spices:
Red chilli powder - 2 tsp
Turmeric powder - 1 tsp
Ginger-garlic paste - 2 tsp
Garam masala powder - 1tsp

Samosa recipe preparation method:-
For dough:
Mix the flour, oil and salt with water to make a smooth dough. Cover with moist cloth, keep aside for few minutes.
For filling:
Peel and boil potatoes until soft. Mash coarse. Heat 3 tbsp. oil, add ginger-garlic paste, green chilli. Stir fry for a minute, add onion, saute till light brown. Add all the spices, chopped coriander leaves and salt. Fry for 2 minute. Keep aside.

Making the Samosa:
Roll out the dough into round shapes and cut in the middle. Put 1 tbsp of the filling in one end and make a nice cone. Stick the edges with a litter water. Heat cooking oil and deep fry the samosas. Do not fry on high, or the samosas will turn out oily. Serve hot indian samosa with tomato sauce and tea.

Cornflour - 1 tbsp
Almonds (chopped) - 10
Pistachios (chopped) - 10
Cardamom (powdered) - 5-6
Saffron - few strand
Rose water - 2-3 drops
Sugar to taste (if required)

Kulfi recipe preparation method:-
Boil the milk. Add the condensed milk and keep stirring till it thickens. Mix cornflour in half cup cold milk to a smooth paste and add it to the milk mixture and sugar if required. Keep stirring till it is thick. Remove kulfi from heat. Add rose water, almonds, pistachios and cardamom powder. Lightly roast the saffron and soak in a little milk. Add it to the Kulfi mixture and mix well. Keep aside to cool. Pour it in the Kulfi container and keep for refrigeration.

In a very large bowl allow egg whites to stand at room temperature for 30 mins. Sift powdered sugar, baking powder and flour together; set aside. Add fresh cream and vanilla to egg whites. Beat it nicely in mixer. Add the above flour mixture over beaten egg whites in a large mixing bowl and blend on medium speed until well blended. Pour into greased 9 x 9-inch baking pan or a round pie plate. Spread cinnamon evenly over batter. Bake at 350 degree for 30 to 40 minutes or until top springs back when lightly touched (a toothpick inserted in the center comes out clean).

Prepare filling for Spring roll : Heat oil in a pan. Add onions and fry till brown. Add all the vegetables,and cook till tender. Add salt, garam masala powder and black pepper powder. Do not add water. Remove from fire and keep aside.
Prepare Roll : Mash Potato with breadcrumbs or plain flour. Add butter and salt, make a smooth dough. Divide the mixture into four parts. Spread out a layer of potato dough. Spread vegetable mixture and then tomato sauce. Add grated paneer on top. Slowly roll the potato dough. Pack in an aluminum foil and steam bake (boil water in pressure cooker - keep a small container and steam the roll in it) for an hour without pressure/weight. Allow to cool, remove foil.
